Fellow members, Because I have learned that a Beekeeping 101 instructor made the statement that there are no regulations pertaining to honey extraction, I'm reiterating that there are if you intend to sell honey. If you don't intend to sell honey, then you can extract as you will. This presents a problem to beekeepers that would like to sell their honey following the DACTP regulations (which includes extracting, bottling and labeling) but don't have an approved kitchen or honey house. I found two facilities with approved kitchens that could be rented/used when I was searching several years ago until a friend allowed me the use of her licensed kitchen, for which I am grateful. Not everyone has a friend with a licensed kitchen so I'm sending this out to see if there's interest in pooling together to extract honey. First off, if a member has a honey house or approved kitchen that they're willing to share with the membership please let me know and Fred can post the information on the blog. Otherwise, the Berlin Senior Center was one place that I contacted and they rent out their commercial kitchen for $50.00 per weekend, and only per weekend (at that time). That was more than I wanted to spend, but it was an option. If several people pool together it will defray the cost per person. They do not have the 3 stainless steel sinks as stated in the DATCP regulations, but I was told it is a state licensed commercial kitchen. Another option I tried to get information on is the Green Lake Community Kitchen. I did have a few emails go back and forth but it was in its infancy and no one could give me a definitive answer as to how I could go about it. Today it is in full swing but they would need to be contacted to see if honey extraction is acceptable and if there's a cost. That's the extent of my knowledge of places that could be used, and if anyone knows of other resources, please let me know so I can spread the information. Last year Tammy at the feed mill said she heard a community kitchen was opening up in the Fond du Lac area but didn't know where. Maybe someone knows?
